Hainanese chicken rice is not one of my favourite dish, but occasionally I find a place which I like. Anthony Bourdain loves this dish too but I prefer Sin Kee stall over the other places and have had its chicken rice more than a couple of times.
There are multiple factors to success in this seemingly simple dish. The oil rice which must be fragrant, succulent chicken and good dips which comprise of dark soy sauce, ginger and chilli. Sin Kee passed all these criterias.
We won't be ordering the beansprouts dish next time, coz the cost price probably cost a tenth of the 5 bucks they charge us. Atrocious. It never occur to me why the vege dishes here in Singapore cost about the same as meat dishes. I don't pay attention to vege dish much probably, but common sense tells a person that the cost of vege is much lesser than meat. Much lesser. :X

Easy Mango Chutney Chicken
Serves 4
Ingredients:
500g of chicken breast strips marinated with spice of choice (I used rosemary, salt, black pepper, paprika and olive oil)
2/3 cup mango chutney
2/3 cup chicken broth
1 tbspn garlic, minced, optional
3 tspn olive oil
Steps:
- In a skillet, heat olive oil over medium-high heat
- Add in the minced garlic and fry until light golden brown colour
- Place chicken strips in hot skillet and cook until nicely browned
- Combine the chutney, chicken broth and pour
over the chicken.
- Cover; reduce heat to low and cook for 10 to 15
minutes, or until chicken is cooked through and chutney turn brown.
I make this for lunch tomorrow with colleague. Hope she likes it.
Sunday evening is usually the family dinner affair with Hubb's family. So the week before I volunteered my service. :) I made this Marlyand chicken which is actually a baked version of fried chicken. It's so easy to make too!
I also made a big Shepherd pie as the main course. They finished it all which I am glad. I also found out that butter is essential in any potato bake.
Maryland chicken
Serves 4
1 kg of chicken wings
Corn flour, seasoned with salt and pepper. I added mild paprika into it
1 egg with 2 tbspn of water, beaten
Panko (Japanese breadcrumb)
Steps:
- Coat the chicken wings in flour
- Then in egg mixture
- Then again in Panko
- Arrange in baking dish and bake at 200°c for 30 to 40 mins
I am going to cook steak this weekend. Bought two nice slices of NZ striploin last night. Hubb surprised me with a DVD set the day before, so I am going to return the "flavour". Hehe. I might make it with blue cheese dressing, or with mustard/caramelised onion and creme fraiche. :) Hope it will be tasty and good looking so I can show off in my blog. :)
